Breakfast Recipe: Gluten Free Oat Bran Pancakes w/ Chia Seeds

I just LOVE me some pancakes and when they are SUPER easy and healthy, I’m all in.  And not to mention, kid approved! BONUS!!

I’ve shared some other delicious pancake recipes (see my Protein Pancake recipe), so play with them all and have fun.

Oh, and what’s KICK-A$$ about this recipe? I have to totally give my Mother-In-Law props for introducing me to this GF Oat Bran and this super easy recipe! It only takes about 3 ingredients! MAJOR BONUS!!

Without further delay, here is it, hold on to your hats, people!

Gluten Free Oat Bran Pancakes

(Serves 1)

1 egg (beaten)

1/3 cup GF Oat Bran (I like Bob Mill’s)

2 tsp of Chia Seeds

1 tbsp of water

*Cinnamon is optional, but always included whenever I can!

In a medium bowl, beat the egg, add in the GF oat bran, chia seeds, water and cinnamon. Stir until a thick liquid consistency (don’t want it too thick or too thin). Heat saute pan with coconut oil, pour mixture into pan to make about 3 pancakes (they will be about 3″ in size). Top with raw honey, almond butter, sliced banana and/or more cinnamon and enjoy!! You can double or triple this recipe to feed more mouths.

There is a great deal of protein in these for your kids too…easy for them to digest and filling! Even my 11 month old loves it!!

Oat bran has plenty of health benefits. It has more antioxidants, protein, calcium, iron, thiamin, phosphorus, riboflavin, magnesium, and zinc than regular oatmeal. It’s naturally low calorie and nutrient dense (TONS of fiber), leaving you feeling fuller longer! Check out more reasons to eat oat bran!
