Clean Eats: Paleo Pumpkin Banana Muffins

Who doesn't love clean eating recipes? Especially when it has the word PUMPKIN and MUFFINS in the title?? Well, you'll have to check these out, as my first impression was "Wow!" That's all I can say on these bad boys!!

I put out a post on my Facebook page to inquire what people's favorite Fall recipes, where, and I got an overwhelming response of PUMPKIN related recipes. Wouldn't you know it, pumpkin just happens to be one of my favorite foods for the Fall.

Well, I had a friend, Trista, that shared a photo of a Pumpkin Muffin recipe she recently made, and after looking at the ingredients, i knew it was one that would become a Fall staple for us – with a little added BANANA to make it my own!

So naturally, it's now a blog article that I want to share with my friends and followers. Grab your kiddo's and have fun with it! Please share in the comments below, what you decided to add to it, if anything, to make it YOUR own!              



• 1 cup almond butter (store-bought or homemade)

• ½ cup pumpkin puree

• 1 small banana

• 2 whole eggs

• ½ teaspoon baking soda

• ¼ teaspoon fine sea salt

• 1 tablespoon Pumpkin Pie Spice*

• ⅓ cup maple syrup (or honey, if you prefer)

 • Optional: Dark chocolate chips
; Walnuts or Organic Raisins (we did 6 with raisins & 6 with dark chips)

Preheat oven to 350, divide batter evenly into a lined 12 cup muffin tin. Bake 15-20mins. Let cool in pan for 15 mins. Store in an airtight container in the fridge or freeze for longer keeping.

I dare you, try and only eat one!!!
