Kid Friendly Protein Rich Meatballs

 

I was getting totally bored with the protein options I was giving the baby (turkey, chicken breast, ground meat, legumes, Greek Yogurt), so I had to come up with something that offered a little bit more of a kick!

Gotta love Pinterest! I found a few kid-friendly Meat Ball recipes that you can make up a head of time, freeze and thaw as you need, and put my own spin to them! BRILLIANT!

They are protein-rich and nutrient dense, so wanted to share! Oh, and the babe and my older kiddo’s LOVE them! You could really get creative with them, but here’s my first crack at them:

Meatball Recipe:IMG_8652

1 lbs of Organic, Grass-Fed Ground Beef (can use ground Turkey too)
3 cups wilted, chopped Kale or spinach
1 diced shallot or onion
2 garlic gloves
2 whole eggs
2/3 cup GF Oat Bran
Preheat over to 350*. Blitz kale & shallot in food processor. Beat 2 eggs in a bowl, add ground beef, GF Oat bran, garlic and chopped kale/shallots. Mix with hands and make into average size balls. Place on baking sheet and bake for 20 mins.
